A Cozy Fall Recipe: Butternut Squash & Sage Pasta

One of the joys of fall is the return of hearty, comforting meals that bring everyone to the table. This Butternut Squash & Sage Pasta is simple, delicious, and perfect for weeknights or dinner parties.

Ingredients:

  • 1 medium butternut squash, cubed

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 2 tbsp butter

  • Fresh sage leaves

  • 1 lb pasta of your choice

  • Parmesan cheese, grated

Directions:

  1. Roast cubed squash at 400° with olive oil, salt, and pepper until tender (about 25 minutes).

  2. In a skillet, melt butter and sauté garlic and sage until fragrant.

  3. Toss cooked pasta with roasted squash and sage butter. Top with parmesan.

Serve with a side salad and crusty bread for the ultimate fall comfort meal. Bonus: leftovers reheat beautifully for lunch.
